Spray mini muffin pan with cooking spray and line them with plastic wrap pressing it down into each cavity.
In a large microwaveable bowl, melt the 16 oz of chocolate candy for 30 seconds at a time until smooth. Usually this takes 2 - 3 minutes.
Add in the .5 cup of peanut butter and stir until smooth.
Stir in 6 oz of Chow Mein until well coated with melted chocolate mixture.
Spoon out about a tablespoon of the mixture into each cavity of the muffin tin.
Move the chow mein noddles around a little so they are sticking up to look like a nest.
Before the chocolate cools and sets, add in a few egg candies in the center of each nest pressing them to stick in place.
Allow nests to set for around 30 minutes at room temperature.
Gently pull the plastic wrap to pop the nests from the muffin tins.

Tips + Variations
You can substitute the chow mein for pretzels for coconut.
Use different colored candy melts to make the nests different colors.
Make sure to use plastic wrap so that you can easily remove the nests from the muffin tin.
StorageThese can be kept for up to a week in an airtight container. Or flash freeze then place in an airtight container in the freezer for up to a year.
