Substitutions & Variations
Need to change out some of the ingredients? Try a few of these variations.
- Replace the Mini Eggs - although we love these because the look the most like actual little eggs, you can use jelly beans instead.
- Add in butterscotch - some recipes for these use butterscotch, if you like that added flavor you can melt it with the chocolate.
- Don't use chow mein noodles - you can use pretzels or even coconut in place of these to change the texture and flavor.
Instructions
Follow along with these super easy step to make your own birds nest cookies.
Step one: Spray a mini-muffin pan(s) with a light layer of cooking spray. Line with a sheet of plastic wrap (the cooking spray keeps the plastic wrap in place), and press the plastic wrap into each cavity.
Step two: Melt the chocolate candy coating for 30 seconds at a time until smooth. Takes about 2 - 2:30 minutes. Add in peanut butter and stir until smooth.
Step three: Add in chow mein noodles and stir until well coated.
Step four: Add a tablespoon of mixture into each cavity of the muffin tin. Situate the chow mein noodles so that they are sticking up and out of the tin to create more of a “nest” look.
Step five: Before the chocolate sets up, place the mini eggs candies in the center of the nest and gently press to stick into place. Allow the nests to set up for approximately 30 minutes at room temperature.
Hint: Use the plastic wrap to get them out of the muffin tin by gently pulling the plastic wrap up.
Recipe Tips for Success
Make sure to heat chocolate until melted, but don't overheat. Stirring every 30 minutes helps to ensure equal heating throughout the chocolate.
Storage
These can be kept in an airtight container for up to a week at room temperature or in the fridge. You can freeze them for up to 6 months, but they are so simple to make that is not usually necessary.

Ingredients
- 16 oz Chocolate Candy Coating
- ½ cup Peanut Butter creamy
- 6 oz Chow Mein
- 1 package Mini Eggs
Instructions
- Spray mini muffin pan with cooking spray and line them with plastic wrap pressing it down into each cavity.
- In a large microwaveable bowl, melt the 16 oz of chocolate candy for 30 seconds at a time until smooth. Usually this takes 2 - 3 minutes.
- Add in the .5 cup of peanut butter and stir until smooth.
- Stir in 6 oz of Chow Mein until well coated with melted chocolate mixture.
- Spoon out about a tablespoon of the mixture into each cavity of the muffin tin.
- Move the chow mein noddles around a little so they are sticking up to look like a nest.
- Before the chocolate cools and sets, add in a few egg candies in the center of each nest pressing them to stick in place.
- Allow nests to set for around 30 minutes at room temperature.
- Gently pull the plastic wrap to pop the nests from the muffin tins.
Notes
- You can substitute the chow mein for pretzels for coconut.
- Use different colored candy melts to make the nests different colors.
- Make sure to use plastic wrap so that you can easily remove the nests from the muffin tin.
