These fun and festive Hershey Kiss Sugar Cookies are a thick, soft and chewy cookie. Make them for any occasion by varying the type of kiss you top them off with.
Add 1 cup of softened butter and 2 cups of white sugar to the mixing bowl.
Cream butter and sugar together on medium high speed for about 2 - 3 minutes. When done they should be light, fluffy and well combined.
Add 2 eggs and 1 teaspoon of vanilla extract to the bowl. Combine well on medium speed for a minute or two.
Add 3 cups of flour, .25 teaspoons of salt and 1.25 teaspoons of baking soda to the bowl. On low speed, mix for a few minutes until well combined.
Use a tablespoon or cookie scoop to measure out 1 tablespoon balls of dough.
Place the balls of dough a few inches apart on the cookie sheet.
Bake for 10 - 12 minutes at 350 degrees or until edges are firm.
Allow cookies to almost completely cool before adding one Hershey's kiss to the center of each cookie.

Tips:
Don't overdo the dough - to keep these soft and chewy, make sure not to overmix or overbake the dough. You should mix it just well enough so ingredients are combined. Cookies should be baked until edges are firm, but centers are still slightly soft.
Don't melt the kisses - if you pop the kisses on immediately after baking they will melt. You can freeze them to help them from melting, but also if you just add them when the cookies are almost completely cool that works also.
Soften the butter - make sure the butter is properly softened (this helps to avoid overmixing). It can be softened by sitting a whole stick at room temperature for an hour; or cut into pieces for about 30 minutes.
Keep them thick - to help them stay thick and round, roll the balls of dough tightly in your hands before placing them onto the baking sheet.
