These pepperoni pizza sliders are you favorite classic pepperoni pizza flavor packed into sandwich form. Them make a great snack, appetizer or easy weeknight dinner.
Preheat the oven to 375 degrees. Line a baking sheet with foil or parchment. Set aside.
In a small sauce pan, heat the oil over medium heat. Add in the peppers and onion and cook for 3-5 minutes or until tender. Set aside.
Using a serrated knife, carefully slice the entire block of sweet rolls horizontally without breaking apart the individual rolls. Set the top half to the side for now.
Spread the pizza sauce over the bottom half of the rolls.
Sprinkle with half of the mozzarella cheese.
Top with a layer of sliced pepperoni.
Sprinkle with the olives, mushrooms, pepper and onion mix.
Top with the remaining mozzarella cheese.
Place the top half of the rolls back in place.
Using a pastry brush, spread a layer of Italian dressing over the top of the rolls.
Bake in the preheated oven for 12-15 minutes or just until browned and slightly crispy.
Serve immediately.

These can be kept for up to 3 days in the fridge. Or, you can freeze them. You can freeze before or after baking, whichever you prefer.
