Instructions
Preheat the oven to 400 degrees. Line a baking sheet with parchment and set aside.
Slice the zucchini into ¼ inch or smaller pieces and place in a medium bowl.
Sprinkle the sliced zucchini with the oil, salt and pepper. Toss to coat.
Transfer the zucchini to the parchment lined baking sheet and spread into an even layer.
Cook in the preheated oven for 20-30 minutes or until slightly golden brown.
Notes
Roasted zucchini is best served fresh. However, you can keep it in the fridge for up to 3 days. Or, you can freeze for up to a year.
