Roasted Zucchini

This roasted zucchini is a super simple, yet delicious side dish everyone is sure to love. It works well for summer potlucks, holiday side dishes and so much more.

  • Baking Sheet
  • Parchment Paper
  • Knife

Ingredients
  

  • 3 medium Zucchinis
  • 1 teaspoon Pepper
  • .5 teaspoon Salt
  • 1 tablespoon Olive Oil

Instructions
 

  • Preheat the oven to 400 degrees.  Line a baking sheet with parchment and set aside.
  • Slice the zucchini into ¼ inch or smaller pieces and place in a medium bowl.
  • Sprinkle the sliced zucchini with the oil, salt and pepper.  Toss to coat.
  • Transfer the zucchini to the parchment lined baking sheet and spread into an even layer.
  • Cook in the preheated oven for 20-30 minutes or until slightly golden brown.

Notes

 Roasted zucchini is best served fresh.  However, you can keep it in the fridge for up to 3 days.  Or, you can freeze for up to a year.
