    Roasted Zucchini

    Roasted zucchini is a quick and easy side dish that brings out the natural sweetness of this tender vegetable. Lightly seasoned and baked until golden, it's a simple way to add fresh flavor to any meal.

    With only four ingredients and five minutes of prep, this recipe is as effortless as it gets. The zucchini cooks in about 20 to 30 minutes, making it a great last-minute option for weeknight dinners, holiday parties or casual gatherings.

    Easy side dishes like this are great to make for all occasions. You might also try these roasted carrots or these sliced sweet potatoes.

    This roasted zucchini pairs well with a wide range of mains, from grilled meats to pasta dishes. It's a healthy, flavorful side that's best enjoyed fresh from the oven.

    Ingredients

    • Medium zucchinis
    • Black pepper
    • Salt
    • Olive oil

    Instructions

    Follow along with these simple directions to roast up a batch of this zucchini for yourself.

    Step one: Preheat the oven to 400 degrees.  Line a baking sheet with parchment and set aside.

    Step two: Slice the zucchini into ¼ inch or smaller pieces and place in a medium bowl. Sprinkle the sliced zucchini with the oil, salt and pepper.  Toss to coat.

    Step three: Transfer the zucchini to the parchment lined baking sheet and spread into an even layer.

    Step four: Cook in the preheated oven for 20-30 minutes or until slightly golden brown. 

    Hint:  Roasted zucchini is best served fresh. 

    Storage

    You can put this roasted zucchini in an airtight container in the fridge for up to 3 days. Or, you can freeze it for up to a year.
