    Roasted Carrots

    Roasted carrots are a simple and flavorful side dish that brings out the natural sweetness of the vegetable. With a tender texture and lightly crisp edges, they're an easy way to add color and freshness to your meal.

    This recipe uses just a handful of ingredients and minimal prep-toss the carrots with oil and seasoning, then let the oven do the rest. Whether you use baby carrots or sliced whole ones, the cook time is flexible based on size.

    These carrots make a great side for weeknight dinners, holiday meals, or meal prep. They're easy to customize with fresh herbs and taste just as good warm or at room temperature.

    Ingredients

    • Baby carrots - we used baby carrots, but you can use slice large carrots, whole carrots or whatever you prefer.
    • Olive oil
    • Salt
    • Pepper
    • Parsley, to serve

    Instructions

    Make these simple roasted carrots super easily by following these easy instructions.

    Step one: Preheat the oven to 425 degrees. Line a sheet pan with parchment or foil and set aside.

    Step two: In a medium bowl, place the carrots, oil, salt and pepper.  Toss to combine.

    Step three: Transfer the carrots to the prepared baking sheet and spread into an even layer. 

    Step four: Cook for approximately 40 minutes, or until tender.  The size of the carrots will determine the cook time.  Continue to cook and check for tenderness every 5-10 minutes or until cooked through and tender.  

    Storage

    You can store these in the refrigerator for up to 5 days as long as they are kept in an airtight container. Or, you can freeze them for up to a year.
