Make these simple roasted carrots super easily by following these easy instructions.
Step one: Preheat the oven to 425 degrees. Line a sheet pan with parchment or foil and set aside.

Step two: In a medium bowl, place the carrots, oil, salt and pepper. Toss to combine.

Step three: Transfer the carrots to the prepared baking sheet and spread into an even layer.
Step four: Cook for approximately 40 minutes, or until tender. The size of the carrots will determine the cook time. Continue to cook and check for tenderness every 5-10 minutes or until cooked through and tender.
Storage
You can store these in the refrigerator for up to 5 days as long as they are kept in an airtight container. Or, you can freeze them for up to a year.
