    Sliced Sweet Potatoes

    Sliced sweet potatoes are a simple and flavorful side dish that comes together with minimal effort. These oven-roasted rounds are lightly seasoned with rosemary, salt, and pepper, then baked until golden and tender.

    With just 10 minutes of prep time and a short ingredient list, this recipe is easy to pull off any night of the week. The thin slices roast quickly and evenly, making them a reliable go-to for busy dinners or holiday spreads.

    These are similar to other quick and easy potato side dishes like these slow cooker jacket potatoes or these smashed potatoes.

    These sweet potatoes pair well with everything from roasted meats to vegetarian mains. They're great for meal prep or a quick side dish and can be served warm straight from the oven.

    Ingredients

    • Extra virgin olive oil
    • Salt
    • Pepper
    • Rosemary
    • Medium sweet potatoes

    Instructions

    Bake these up quickly by following these easy instructions.

    Step one: Preheat the oven to 375 degrees.  Line a baking sheet with parchment or foil (and spray with non-stick spray).  Set aside.

    Step two: Peel and slice the sweet potatoes into ¼ inch thick slices.

    Step three: Lay the sweet potato pieces out on the prepared baking sheet, separating the pieces when needed.

    Step four: Drizzle the olive oil over the potato pieces. Sprinkle with the salt, pepper and rosemary.  Toss to coat.

    Step five: Cook in the preheated oven for about 30 minutes or until the sweet potatoes are tender and the edges are golden brown. 

    Hint: serve warm for best taste.

    Storage

    You can store these in the refrigerator for 2 - 4 days. Or, you can freeze them for up to a year.

    Notes

    Sweet potatoes are best enjoyed fresh.  They can be stored in an airtight container in the fridge for up to 4 days - reheat prior to serving.
