Step one: Preheat the oven to 375 degrees. Line a baking sheet with parchment or foil (and spray with non-stick spray). Set aside.
Step two: Peel and slice the sweet potatoes into ¼ inch thick slices.

Step three: Lay the sweet potato pieces out on the prepared baking sheet, separating the pieces when needed.

Step four: Drizzle the olive oil over the potato pieces. Sprinkle with the salt, pepper and rosemary. Toss to coat.
Step five: Cook in the preheated oven for about 30 minutes or until the sweet potatoes are tender and the edges are golden brown.
