Instructions
Preheat the oven to 375 degrees. Line a baking sheet with parchment or foil (and spray with non-stick spray). Set aside.
Peel and slice the sweet potatoes into ¼ inch thick slices.
Lay the sweet potato pieces out on the prepared baking sheet, separating the pieces when needed.
Drizzle the olive oil over the potato pieces.
Sprinkle with the salt, pepper and rosemary. Toss to coat.
Cook in the preheated oven for about 30 minutes or until the sweet potatoes are tender and the edges are golden brown.
Serve warm.
Notes
Sweet potatoes are best enjoyed fresh. They can be stored in an airtight container in the fridge for up to 4 days - reheat prior to serving.
