These s'mores stuffed sweet potatoes are baked sweet potatoes filled with chopped chocolate and marshmallows, broiled until the marshmallows are toasted, and finished with crushed graham crackers and butter. They are a fun and unexpected fall or Thanksgiving dessert that combines the best of both worlds.
Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Poke several holes in each sweet potato with a fork. Rub skins with olive oil and place on prepared baking sheet.
Bake for 1 hour until very tender when pierced with a fork.
Slice each sweet potato lengthwise. Gently mash the inside with a fork, keeping skins intact. Add ½ tablespoon butter to each and mash until melted and combined.
Sprinkle chopped chocolate over each potato, then top with 2-3 marshmallows each.
Switch oven to broil. Return to oven and broil for 30 seconds to 1 minute until marshmallows are lightly toasted. Watch closely.
Remove from oven and immediately sprinkle with crushed graham crackers. Serve warm.
