This simple 3 ingredient broccoli cheese casserole is perfect for kids and adults alike. Made and ready to serve in individual portions, this is great for parties or weeknights.

Ingredients
  

  • 4 cups Broccoli Florets fresh or frozen
  • .25 cup Heavy Whipping Cream
  • 1 cup Freshly Shredded Cheddar Cheese

Instructions
 

  • Preheat the oven to 400 degrees.  Spray 6-7 4oz ramekins with non-stick spray.  Set aside.
  • If using fresh broccoli, rinse thoroughly and drain off excess water.  Cut the stems off and chop the florets into one inch size pieces. 
  • Place your trimmed fresh broccoli or frozen broccoli in a large bowl and microwave for 3 minutes. 
  • Pour in the heavy whipping cream and sprinkle with half of the shredded cheddar cheese.
  • Toss the mixture to coat the broccoli. 
  • Transfer the broccoli to the individual serving ramekins just until the top of the rim. 
  • Sprinkle with the remaining shredded cheese.
  • Place the ramekins on a baking sheet and cook in the preheated oven for 10-15 minutes or until the cheese is melted and golden.
  • Serve warm.

Notes

You can store these covered in the fridge for up to 4 days. While you can freeze this dish for up to a year, it would take up a lot of room stored in the ramekins.
Feel free to change up the flavors by switching out the cheddar for your favorite cheese.  We also like to use Colby Jack or Gouda.
