Ingredients
  

  • 12  tortillas street taco sized
  • 2 c chicken shredded
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • ½ red onion chopped
  • 1 red bell pepper chopped
  • 1 jalapeno pepper deseeded and chopped finely
  • 4 oz canned chopped green chiles drained
  • toppings of your choosing

Instructions
 

  • Heat the olive oil in a skillet over medium heat.
  • Add in the onions and red bell pepper into the skillet, and saute for 3 minutes.
  • Stir in the jalapenos, and saute another 3 minutes.
  • Mix in the chicken and sprinkle with the taco seasoning.
  • Stir to combine, and saute for another 3 minutes.
  • Place a layer of filling on each tortilla, and roll them tightly closed over the filling.
  • Add the taquitos to the air fryer seam side down.
  • Cook at 400 degrees for 6-8 minutes, or until the tortillas are browned and crispy on the outside.
  • Serve immediately with your choice of toppings.

Notes

Don't overfill your taquitos or they'll be difficult to roll and may burst open during cooking. Use about 2-3 tablespoons of filling per tortilla and spread it in a line down the center, leaving space at the edges. Roll them as tightly as possible and place seam side down in the air fryer so they stay closed without needing toothpicks.
