Avocado Cucumber Dill Salad

This light and creamy avocado cucumber dill salad is a super easy cold side dish to make. It is great for serving at warm weather celebrations like July 4th, picnics, barbeques and more.

Ingredients
  

  • 1 Cucumber Peeled + Sliced
  • ½ Avocado Cubed
  • ½ Red onion Diced
  • ¼ Cup Sour Cream
  • 1 Tbsp Dill
  • Teaspoon Salt
  • Teaspoon Pepper

Instructions
 

  • Peel and slice cucumber into rounds. Add to bowl.
  • Cut avocado into small pieces. Add to bowl.
  • Dice red onion and add to bowl.
  • In separate bowl, mix dill, sour cream, salt and pepper.
  • Mix sour cream into the cucumber mixture until well coated.
  • Chill and serve cold.

Notes

Tips + Storage 
  • Chill in fridge for a few hours before serving.
  • Stays good for 2-3 days when covered in the fridge. Though avocado may brown slightly.
