This light and creamy avocado cucumber dill salad is a super easy cold side dish to make. It is great for serving at warm weather celebrations like July 4th, picnics, barbeques and more.

1 Cucumber Peeled + Sliced ½ Avocado Cubed ½ Red onion Diced ¼ Cup Sour Cream 1 Tbsp Dill ⅓ Teaspoon Salt ⅓ Teaspoon Pepper
Peel and slice cucumber into rounds. Add to bowl.
Cut avocado into small pieces. Add to bowl.
Dice red onion and add to bowl.
In separate bowl, mix dill, sour cream, salt and pepper.
Mix sour cream into the cucumber mixture until well coated.
Chill and serve cold.
Tips + Storage
Chill in fridge for a few hours before serving.
Stays good for 2-3 days when covered in the fridge. Though avocado may brown slightly.
