Ingredients
  

  • 2 Egg Whites
  • ¼ teaspoon Vanilla
  • ¼ cup Flour
  • teaspoon Salt
  • ¼ cup Granulated Sugar
  • ½ cup Chocolate Chips
  • Sprinkles decoration

Instructions
 

  • Make your fortunes by cutting .5 x 3 inch slips of paper and writing fortunes on them. Or, you can print these out.
  • Preheat the oven to 400 degrees Fahrenheit and line the baking sheet with parchment paper.
  • Combine 2 egg whites and ¼ teaspoon of vanilla in a bowl. Whisk until frothy and bubbly.
  • Add in ⅛ teaspoon salt, ¼ cup sugar, ¼ cup flour and whisk to combine.
  • Drop two spoonfuls of batter onto prepared baking sheet a few inches apart. Use the back of the spoon to spread them about 3 inches in size.
  • Bake for 5 minutes or until center is set and edges are browned.
  • Immediately upon removing from oven, use a spatula to work the cookie off the parchment paper.
  • Lay the cookie down and place the fortune in the center.
  • Fold the edges of the cookie over to cover the fortune.
  • Place the folded cookie over the edge of a cup to create a crease in the center.
  • Place folded cookie into the cavity of a cupcake tin to help hold its shape while it cools.
  • Once all cookies are made, melt chocolate chips in 30 second intervals in the microwave, stirring between each heating.
  • Use a spoon (or place chocolate into a piping bag) and drizzle melted chocolate over cookies. Then, top with sprinkles.

Notes

Tips
  • Work quickly, only baking 2 cookies at a time so that you can shape them before the cool.
  • Make your fortune slips before you start making the cookies.
  • Change up the colors and types of sprinkles to make these fit for different occasions.
Storage
  • These can be kept for up to a week in an airtight container in the fridge or at room temperature.  Or, you can freeze them for up to 6 months.
