Fruit Custard Pie

This easy fruit custard pie is super easy to make. With only 8 ingredients, this is a perfect summer treat.

Ingredients
  

  • 1 Pie Crust storebought/premade
  • 2 cup Mixed Berries
  • ¾ cup Sugar
  • ½ cup Butter softened + unsalted
  • ¼ cup Flour
  • 2 Eggs
  • 1 tablespoon Vanilla Bean Paste or Vanilla Extract
  • Powdered Sugar to garnish

Instructions
 

  • Preheat the oven to 325 degrees.
  • Carefully unroll your premade pie crust and shape it to a 9 or 10 inch pie pan.  Set aside.
  • Combine ¾ cup sugar, ¼ cup butter, ¼ cup flour, 2 eggs and 1 tablespoon vanilla bean paste.  Mix until combined - scraping the side often. 
  • In the bottom of the pie crust, spread out the fruit in an even layer.   
  • In the bottom of the pie crust, spread out the fruit in an even layer.
  • Bake in the preheated oven for 40-50 minutes or until the crust is golden brown and the center of the pie has a slight jiggle to it.
  • Allow the pie to cool to room temperature.  Then place the pie in the fridge until ready to serve, at least 2 hours to set the custard.
  • When ready to serve, dust with a sprinkling of powdered sugar.

Notes

Storage
You can store this fruit custard pie covered in the fridge for 3 - 5 days. It can also be frozen whole or in slices for up to 6 months.
