Slow Cooker Glazed Carrots

These slow cooker glazed carrots are a sweet, tender veggie side dish that is great for holidays or every weeknight. They take little time to prep and are sure to be a hit with everyone.

  • Small Bowl

Ingredients
  

  • 2 lbs Baby Carrots prewashed
  • .25 cup Butter Melted
  • .25 cup Brown Sugar
  • 1 teaspoon Salt
  • .5 teaspoon Cinnamon
  • .25 teaspoon Nutmeg optional
  • 1 tablespoon Parsley fresh, to garnish

Instructions
 

  • Place the carrots in the slow cooker. 
  • In a small bowl, combine the melted butter, brown sugar, salt, cinnamon, and nutmeg (if using) and whisk to combine. 
  • Pour the mixture over the carrots. 
  • Toss the carrots in the mixture.
  • Heat over low heat for about 5-6 hours or high heat for 3-4 hours or until the carrots are tender.  Stir occasionally.
  • Remove the lid to the slow cooker for the last 15-20 minutes to thicken the glaze. 
  • Serve with a garnish of fresh parsley. 

Notes

Carrots should be stored in an airtight container for up to 5 days.  Reheat prior to serving.  Alternatively, you can freeze them for up to 6 months.
