Instructions
Place the carrots in the slow cooker.
In a small bowl, combine the melted butter, brown sugar, salt, cinnamon, and nutmeg (if using) and whisk to combine.
Pour the mixture over the carrots.
Toss the carrots in the mixture.
Heat over low heat for about 5-6 hours or high heat for 3-4 hours or until the carrots are tender. Stir occasionally.
Remove the lid to the slow cooker for the last 15-20 minutes to thicken the glaze.
Serve with a garnish of fresh parsley.
Notes
Carrots should be stored in an airtight container for up to 5 days. Reheat prior to serving. Alternatively, you can freeze them for up to 6 months.
