    Slow Cooker Glazed Carrots

    Slow cooker glazed carrots are a sweet and savory side dish that's perfect for holiday dinners or weeknight meals. Baby carrots are slow-cooked in a buttery brown sugar glaze with hints of cinnamon and optional nutmeg for extra warmth and flavor.

    This recipe takes just five minutes to prep and then simmers in the slow cooker until the carrots are tender and perfectly coated in glaze. It's an easy, hands-off way to add a festive side to the table without using up oven space.

    These glazed carrots are ideal for Thanksgiving, Christmas, or any occasion where you want something comforting and flavorful. They're easy to make ahead and reheat beautifully for leftovers.

    Ingredients

    • Baby carrots
    • Butter, melted
    • Brown sugar
    • Salt
    • Cinnamon
    • Nutmeg (optional) 
    • Fresh parsley, to garnish

    Instructions

    When you are ready to cook up a batch of these slow cooker carrots with glaze, simply follow these easy directions.

    Step one: Place the carrots in the slow cooker.

    Step two: In a small bowl, combine the melted butter, brown sugar, salt, cinnamon, and nutmeg (if using) and whisk to combine.

    Step three: Pour the mixture over the carrots. Toss the carrots in the mixture.

    Step four: Heat over low heat for about 5-6 hours or high heat for 3-4 hours or until the carrots are tender.  Stir occasionally. 

    Step five: Remove the lid to the slow cooker for the last 15-20 minutes to thicken the glaze. 

    Hint: Serve with a garnish of fresh parsley.

    Storage

    Carrots should be stored in an airtight container for up to 5 days.  Reheat prior to serving.  Alternatively, you can freeze them for up to 6 months.

    • 2 lbs Baby Carrots prewashed
    • .25 cup Butter Melted
    • .25 cup Brown Sugar
    • 1 teaspoon Salt
    • .5 teaspoon Cinnamon
    • .25 teaspoon Nutmeg optional
    • 1 tablespoon Parsley fresh, to garnish
