These easy apple pie cookies capture the classic taste we all know and love and pack it into cookie form. If you love sweet apples, a little cinnamon and sugar and you're a fan of cookies then this one is a must try!
We were super excited to make this recipe because apple pie flavor is one of our favorite dessert flavors. Plus, these are super easy to make with only nine ingredients, they're ready in under 20 minutes.

📋Ingredients
- Pie crusts- used for the base and top of the cookies.
- Butter - unsalted
- Apples - medium size, peeled and diced. We like to use honeycrisp but you can use any variety you like Golden delicious and Granny Smith are two other popular varieties to use.
- Brown sugar
- Lemon juice - freshly squeezed or packaged is fine.
- Water
- Cornstarch - to help thicken the apple filling.
- Powdered sugar
- Heavy cream

This recipe is pretty straightforward with not a lot of variations due to the small amount of ingredients. However, here are a few things you can try.
- Premade pie filling - make this recipe even quicker by using pre-made apple pie filling.
- Change up the topping - We drizzled a light icing on top of these cookies. However, you can skip the icing use store-bought icing or add a little dollop of whipped cream or vanilla ice cream instead.

Easily bake up your own batch of these cookies by following these step-by-step instructions.
Step one: Preheat the oven to 350 degrees Fahrenheit. And, line baking sheet with parchment paper or spray with non-stick cooking spray.
Step two: Add diced apples and butter to sauce pan. Heat on medium for about 5 minutes or until butter is melted.
Step three: Add in lemon juice and brown sugar. Heat on medium for 5 - 10 minutes or until apples are tender.
Step four: In a small bowl, combine water and cornstarch.
Step five: Add cornstarch mixture to apples and stir. Allow to cool.
Step six: Unroll pie crust and cut as many bottoms with a 3 inch cookie cutter as you can.
Step seven: Unroll second pie crust and use a pizza cutter or knife to cut into ¼ inch strips.
Step eight: Lay half the strips vertically half inch apart. Then, flip every other strip up and lay another perpendicular. Replace flipped strips and take ones not flipped and flip them up. Then place a new perpendicular strip and repeat until you have used them all.
Step nine: Gently press the lattice pieces together. Then, use round cookie cutter to cut them into circles
Step ten: Take the full circles of pie crust and spoon a tablespoon of the apple filling in the center of each.
Step eleven: Place a lattice piece on top of each and use a fork to press the crusts together. Bake for 18 - 20 nminutes.
Step twelve: In a small bowl, combine powdered sugar and heavy cream to make the icing.
Step thirteen: After cookies have cooled, drizzle icing over the top.
Hint: cookies are done when they are lightly golden brown.
⭐Recipe Tips for Success
- Don't overfill - make sure you keep the apple filling to a tablespoon or less. Otherwise the filling will spill out and the cookies will be messy.
- Use the cornstarch - you may be tempted to skip adding the cornstarch mixture, but don't! This is what thickens the apple filling up.
- Seal the cookies - don't forget to use a fork to press the top and bottom of the cookies together. Not only does it create a cute little crimped marking on them, but it helps hold them together.
Storage
These cookies can be stored for 4 - 5 days when sealed in an airtight container in the refrigerator. Or, they can be frozen in freezer bags or an airtight container for up to a year.
Apple Pie Cookies
Ingredients
- 2 Refrigerated pie crusts
- 3 tbsp Butter Unsalted
- 2 Medium Apples Peeled and diced
- ½ cup Brown Sugar
- 2 Tbsp Lemon juice
- 2 tablespoon Water
- 1 tablespoon Cornstarch
- ½ cup Powdered sugar
- 3 Tbsp Heavy cream
Instructions
- Preheat oven to 350 degrees Fahrenheit. Line baking sheet with parchment paper or spray with non-stick spray.
- Combine 2 diced apples and 3 tablespoons of butter in a saucepan. Heat on medium until butter has melted (about 5 minutes)
- Add 2 tablespoons of lemon juice and ½ cup of brown sugar. Heat another 5-10 minutes or until apples are tender.
- In a small bowl, combine 2 tablespoons or water and 1 tablespoon of cornstarch.
- Add cornstarch mixture to apples and stir for a minute. Set aside to cool.
- Unroll one pie crust and use a 3 inch cookie cutter to cut 12-14 circles out of it.
- Unroll second pie crust and slice into ¼ inch strips with a knife or pizza cutter.
- Lay half the strips out vertically about ½ inch apart.
- Flip every other stop up and lay one stop perpendicular at the top of the vertical strips.
- Place another perpendicular strip about half inch down from the first one and then flip all the strips back down.
- Continue this until all strips are woven into the lattice
- Gently press the strips together.
- Use the 3 inch cookie cutter to cut the lattice into circles.
- Place one tablespoon of apple filling in the center of each whole round.
- Place one lattice circle on top of each cookie and use a fork to press the two pieces together around the edges.
- Bake the cookies for 18-20 minutes or until golden brown.
- In a small bowl, combine ½ cup powdered sugar and 3 tablespoons heavy cream to make the icing
- Drizzle icing over each cookie once they have cooled.
Notes
- You can use store-bought pie filling. And you can change up the flavor by using cherry, peach or any other kind you like.
- Try different toppings like vanilla ice cream or whipped cream.
- Don't overfill the cookies or the filling will spill out.
- Make sure to seal the edges with a fork to keep the cookies held together well.
