    Nutcracker Charcuterie Board

    A nutcracker charcuterie board is a show-stopping holiday appetizer where cheeses, salami, chorizo, olives, grissini sticks, and crackers are arranged on a serving board to look like the iconic Nutcracker figure. Every ingredient plays a role - cheese forms the face, chorizo creates the arms, olives make the headdress, and crackers and pretzels fill in the details.

    Ingredients

    • Black diamond cheddar
    • Smoked braid cheese
    • Brie
    • Salami
    • Chorizo sticks
    • Square cheddar
    • Olives
    • Crackers or pretzels
    • Grissini sticks
    • Lettuce leaves
    • Bologna
    • Bell pepper
    • Mayonnaise

    Instructions

    Preparation: Set out all ingredients and a large serving board. Have a sharp knife, small cookie cutter or piping tip, and toothpicks ready. Clear enough space on the board to build the full Nutcracker figure from top to bottom.

    Step one: Form the Nutcracker's face. Using a piping tip or small round cookie cutter, cut small circles from the bologna for cheeks. Cut a small piece of bell pepper for the nose. Shape olive slices into eyes, eyebrows, and a mustache, and use a small dot of mayonnaise for each pupil. Trim the edges of a square of cheddar into a face shape and place it at the top of the board. Line the face with the bologna circles, olive features, and bell pepper nose.

    Step two: Cut the smoked braid cheese into 1-inch sections and separate the strands into fibers to form the Nutcracker's hair. Arrange around the top of the face. Place a grissini stick vertically down the center of the board to form the body.

    Step three: Cut a chorizo stick in half lengthwise and arrange the two halves on either side of the grissini as the Nutcracker's arms. Use a cookie cutter to cut 4 cylinders, about 2 inches in diameter, from the brie - use 2 for the cuffs at the end of each arm and 2 for the epaulettes at the shoulders.

    Step four: Arrange overlapping salami slices in a rack formation across the lower body section of the board to form the Nutcracker's coat. Trim the black waxy rind from the diamond cheddar and shape it into a thin strip to use as a belt across the middle.

    Step five: Cut the remaining black diamond cheddar into small random pieces and arrange them in the upper right corner of the board. Add the remaining brie around the board. Form the Nutcracker's headdress using olive slices arranged in a decorative pattern above the face. Arrange lettuce leaves, pretzels, crackers, and remaining grissini sticks around the edges and top of the board to frame the figure and fill any gaps.

    Hint: Build the Nutcracker's face and body structure first before adding any of the surrounding crackers and garnishes - it is much easier to get the proportions right when you can see the full figure taking shape before filling in the edges.

    Recipe Tips for Success

    • Work from the top of the board down - start with the face, then the hair, then the body, then fill in the surrounding board last. This keeps the figure proportional and prevents you from running out of space.
    • Use toothpicks to temporarily hold elements in place while you work, then remove them before serving if they are not needed for structure.
    • The ingredients are flexible - the source recipe suggests vegetables, fresh fruit, or nuts for a lighter version, or candies, berries, and marshmallows for a kid-friendly take.
    • This board can be scaled up for a larger group by using a bigger board and proportionally increasing each ingredient.

    Storage

    Store any leftover components separately in airtight containers in the refrigerator. Cheeses and cured meats keep for up to 3 days. Crackers and grissini are best stored at room temperature in an airtight container. The assembled board is best served the day it is made.

    Ingredients
      

    • 6 oz cheddar black diamond
    • 2.5 oz smoked braid cheese
    • 3 oz salami
    • 5 oz brie
    • 7 chorizo sticks ½ oz
    • ⅓ cup olives
    • ½ cup crackers or pretzels
    • 5 grissini sticks
    • 7 lettuce leaves
    • Mayonaise dollop for eyes
    • Bell pepper a few slices
    • Bologna a few slices

    Instructions
     

    • Set out all ingredients and a large serving board. Have a sharp knife, piping tip or small cookie cutter, and toothpicks ready.
    • Form the face: cut small bologna circles for cheeks, a bell pepper piece for the nose, and shape olives into eyes, eyebrows, and a mustache with mayonnaise pupils. Place a trimmed square of cheddar at the top of the board and add all face features.
    • Separate braid cheese into fibers for hair and arrange around the face. Place a grissini stick vertically down the center as the body.
    • Halve a chorizo stick lengthwise for the arms. Cut 4 brie cylinders - 2 for cuffs, 2 for epaulettes - and arrange at the ends of the arms and shoulders.
    • Arrange overlapping salami slices across the lower body for the coat. Shape a strip of black diamond cheddar rind into a belt across the middle.
    • Arrange remaining black diamond cheddar pieces in the upper right corner. Add remaining brie around the board. Form the headdress with olive slices above the face. Fill the edges with lettuce leaves, pretzels, crackers, and remaining grissini.
