This strawberry pretzel pie is an easy pretzel crust layered with a sweet and and smooth cream cheese filling topped off with a strawberry compote. It is a sweet and fruity pie perfect for summer.

This recipe does require 4 hours of chill time, but the actual prep and bake time is only around 30 minutes. This pie is super easy to put together with no fancy baking techniques required.

- Brown Sugar
- Butter - unsalted + melted
- Cream Cheese - softened
- Lemon Juice
- Lemon Zest
- Granulated Sugar

Instructions
Follow along with these easy step-by-step directions to bake up your own strawberry pretzel pie.
Step one: Preheat the oven to 350 degrees. Lightly spray a 9 inch pie pan. Set aside.
Step two: Crush pretzels into small crumbs. Add in Melted butter and brown sugar and mix to combine.
Step three: Press the crumb mixture into the bottom of the pie pan and up the sides. Bake for 10 minutes to toast.
Step four: Combine cream cheese, lemon juice, lemon zest and sugar at medium speed until creamed and smooth.
Step five: In clean bowl, add heavy cream and whip on medium speed for several minutes until stiff peaks form.
Step six: Fold whipped cream into cream cheese mixture.
Step seven: Scoop cream cheese mix into the pie crust and spread evenly. Loosely cover and chill in fridge for 2 hours.
Step eight: In a saucepan, combine sugar, water, lemon juice, strawberry gelatin and cornstarch. Boil for 1 minute and then pour over cut strawberries and mix.
Step nine: Scoop the strawberry mixture over the cheesecake mixture and spread evenly. Chill for 4 more hours or until set.
Storage
You can store the pie covered in the fridge for 2 - 3 days. Freezing this pie works OK (both whole or in slices), but the cream cheese layer will not be as creamy on thawing.

Ingredients
For pretzel crust
- 3 cup Pretzel Crumbs
- ¼ cup Brown Sugar
- ½ cup Butter melted + unsalted
For cheesecake layer
- 8 oz Cream Cheese softened
- 1 tablespoon Lemon Juice
- 1 teaspoon Lemon Zest
- ¼ cup Sugar
- ½ cup Heavy Cream
For strawberry layer
- 4 cup Strawberries fresh + cut
- ¼ cup Sugar
- ½ cup Water
- 1 tablespoon Lemon Juice
- 3 tablespoon Strawberry Gelatin
- 2 tablespoon Cornstarch
Instructions
For pretzel crust
- Preheat the oven to 350 degrees. Lightly spray a 9 inch pie pan. Set aside.
- In a food processor, crush 3 cups of pretzels until small crumbs.
- Combine pretzel crumbs in a medium bowl with ½ cup melted butter and ¼ cup brown sugar.
- Press the crumb mixture into the bottom of the pie pan and up the sides.
- Bake in the preheated oven for 10 minutes to toast. Allow to cool before filling.
For cheesecake filling
- Combine 8 oz cream cheese, 1 tablespoon lemon juice, 1 teaspoon lemon zest, ¼ cup sugar on medium speed for a few minutes until creamed and smooth.
- In a clean bowl, whip ½ cup heavy cream on medium high for a few minutes until stiff peaks form.
- Combine whipped cream with cream cheese mixture and fold gently to combine.
- Scoop the cream cheese mix into the pie pan and spread evenly to the edges.
- Loosely cover and chill in the fridge for two hours.
For strawberry layer
- In a large saucepan, combine ¼ cup sugar, ½ cup water, 1 tablespoon lemon juice, 3 tablespoon strawberry gelatin and 2 tablespoon cornstarch. Bring to a boil and stir constantly for one minute.
- Place the 4 cups of cut strawberries in a large bowl. Pour the gelatin mixture over the strawberries and stir gently to coat.
- Scoop the strawberry mixture over the cheesecake layer and spread evenly.
- Chill for an additional four hours or until completely set.
