    Pumpkin Spice Cake Mix Cookies

    These pumpkin spice cookies with cake mix and cream cheese morsels are a quick and cozy fall treat. Made with just a handful of ingredients, they come together in minutes and bake up soft and flavorful with minimal effort. Each bite combines warm spice and rich pumpkin flavor with pockets of sweet cream cheese.

    Using a box of spice cake mix as the base keeps things simple, while canned pumpkin adds moisture and seasonal flavor. The cream cheese morsels melt slightly into the cookies for a creamy, tangy contrast that pairs perfectly with the warm spices.

    Ingredients

    • Pure pumpkin - canned
    • Spice cake mix
    • Egg
    • Vanilla extract
    • All spice
    • Cream cheese flavored chocolate morsels

    Instructions

    Bake these easy pumpkin spice cookies up with these simple instructions.

    Step one: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set it aside.

    Step two: Add pumpkin, egg and vanilla extract to a large bowl and mix with an electric mixer until smooth.

    Step three: Add package of cake spice mix and all spice to the pumpkin mixture. Mix with a mixer until smooth and there are no lumps.

    Step four: Fold in the cream cheese  morsels to the mixture. Cover with plastic wrap and then let chill in the refrigerator for 45 minutes to an hour.

    Step five: After the cookie mix has chilled in the refrigerator you can now use an ice cream scoop to scoop the cookies onto the parchment lined baking sheet.

    Step six: Bake for 15 minutes and then transfer to a cooling rack.

    Storage

    These cookies can be stored for about 5 days in an airtight container. Or, you can freeze them for up to a year.
